Pita Pockets for a Picnic


  • 3 Tbsp. extra-virgin olive oil
  • 1 Tbsp. balsamic vinegar
  • 1¼ c. plum or cherry tomatoes, chopped
  • 1 c. cucumber, peeled and diced
  • 1 c. bell pepper, chopped
  • 2/3 c. onion, chopped
  • ½ c. fresh parsley, chopped
  • 4 8-inch whole wheat pita breads, halved


  • For the filling, mix the first 7 ingredients in a large bowl. Store filling in individually portioned plastic sandwich bags (separately from the pita bread). When ready to eat, empty contents of one bag into the pocket of the pita.
